Blueberry • cherry • soy • Leather • smoke
Tasting Notes
Bright aromas of blueberry and cherry fruit are enhanced by Chinese five spice and soy. Leather, smoke, and vanilla round out the experience. The fruit aromas are carried through in the mouth. The perfect balance of acid to fruit along with the smooth structure maintains the varietal character of this wine. The taste lingers on the tongue with roasted nuts, vanilla, and blackberry.
Food Recommendations: The perfect match with Paella, roasted or grilled lamb and beef, and hard cheeses like Manchego and Asiago.

crisp apple • vanilla • subtle oak • elegant • fresh
Tasting Notes
This is an elegant Chardonnay made in the French Burgundy style rather than the typical California style. There are layers of flavor without edges or gaps. It's fresh without being tart, will age well, and compliments food. This is one Chardonnay you won't have to finish drinking before the meal.
From the Winery
Sonoma Valley is our favorite appellation for Chardonnay. It has the perfect combination of soil and weather to grow perfectly balanced Chardonnay grapes. The soil is volcanic, with elevated levels of trace minerals, and relatively shallow soils without too much vigor. The weather is cool at night, often overcast or foggy in the morning, and warm in the afternoons, between 75 and 90°F in the summer. It rains a lot in the... »More

Peach • butter • pear • Truffles • white blend
Tasting Notes
These tasting notes are often based on the winemaker's notes. Well, this time he told me that this %@#$! had aromas of peaches and butter. Have you ever buttered a peach? Just weird if you ask me. Then he goes on to mention creamy flavors of pear and truffles. Okay, now we have peaches and butter and pears and mushrooms. Is this insane or what? Well, I can tell you that this %@#$! is a lot yummier than that, and has body and character almost like a red wine. And it will even lay down for a few years. How cool is that? Food Pairings: Just About Anything! Hearty salads, risottos, pork, Thai food, seared Ahi tuna...sweet and sour SPAM!

Tasting Notes
Ribolla Gialla, grown primarily in the Collio region of Friuli, Italy and Slovenia, dates back to the 13th century, and Vare Vineyards is the only winery in the US producing it! The grapes were whole cluster pressed and had a long, cool fermentation in once-used French oak barrels, with the wine being bottled at the end of May 2006. Our Ribolla Gialla is a full-flavored, medium-bodied, dry, slightly spicy, citrus-flavored white wine with a long, creamy finish.

raspberry • cherry • black pepper • Baking spices • vanilla
Tasting Notes
The words "Dry Creek Zin" conjure up images of luscious unions of raspberry and black pepper. Our 2002 Tradizionale Zinfandel exhibits these traditional characteristics and more. This wine offers tempting aromas of cherry, raspberry and black pepper with hints of baking spices. The smooth flavors of ripe raspberry, rich cherry and sweet vanilla balance perfectly with the tannin and oak. These delicious flavors carry through to the long, lingering finish, satisfying even the strongest Dry Creek Zin craving.
From the Winery
This is the kind of wine that really got me hooked on Zinfandel. A traditional, old-vine field-blend, this wine to me is the classic "raspberry jam" that differentiates the best Dry Creek Valley Zins from all others. Big, but balanced. Fruity, yet elegant. This... »More

cherry • raspberry • clove • great structure • tempranillo
Tasting Notes
For several crushes, our buddy Scotty (not our winemaker, another Scott) helped us with punchdowns, pressings, rackings, and just about any other task you have during crush. You always knew Scotty was around because of the aroma of his clove cigarettes. You'll note that this Tempranillo also has a hint of clove, along with aromas and flavors of cherry and raspberry. Not to mention great structure and acidity, but I digress. Now Scotty works for another winery, but somehow the aroma of clove still wafts around the crush pad. Some suspect Scotty is stealing beer from the lab fridge, but it's probably just the Tempranillo. Food Pairings: Tapas! Spicy sausages and salamis, linguica, ham, game, pot roast and fried SPAM fingers.

blackberry • Floral • chocolate • inky • complex
Tasting Notes
Broad structured, long-finishing Cabernet was enriched with Syrah. Merlot and Sangiovese added flavor and flowers at the front of the palate. Malbec added inky color and blackberry fruit. Cabernet Franc added a chocolate affect, giving the whole experience an upward, aerial lift. The same varietals from different vineyards added complexity.
The wine was made cleanly from hand sorted and gently pressed fruit, with no fining necessary. Our specialized technique assures full fruit character, soft tannins, low acid and a rich mouth feel. The component wines were aged in the caves for three years.

Tasting Notes
Our 2006 Sauvignon Blanc is bright and crisp, yet fuller and more generous than you might expect! With a smooth mouthfeel and an uncommonly long finish, this wine truly provides an unrivaled complexity and an exceptional depth.
From the Winery
2006 was an exceptional vintage, especially for early ripening varietals like Sauvignon Blanc. The spring was warm and the summer mild. Winter rains waited until the last grapes were harvested.
Perfectly vine-ripened grapes were hand sorted and whole-cluster cold pressed. Multiple yeast fermentation started in a tank with the temperature slowly lowered to 45 degrees. The final stage of fermentation was in neutral oak barrels in our cool cave. Fermentation took five months, producing a generous amount of glycerin, which contributes to the viscous... »More

Fruit-forward • strawberries • raspberries • smooth tannins • luscious
Tasting Notes
The real test is how this wine tastes! The most common word we hear is delicious. It has luscious forward fruit, invoking ripe strawberries and raspberries. It’s what I love most about fully vine-ripened Sangiovese. It’s got smooth tannins, both from the fruit and from barrels especially selected for this blend, and is made in the tradition of the great Brunellos of Italy. The component wines were barrel aged for 2 years before blending. The blend was then aged for an additional 1 and a half years, 3 and a half years all together. We bottled the wine in February of 2007 and released it six months later. You don’t have to age this wine. It is ready. We’ve done all the waiting for you! We hope... »More

Aromas of your rich uncle's old cedar cigar box blend smoothly into plum and blueberry explosions. When the fruit bombing stops you are left with a creamy smooth sensation of vanilla and cream. The Carica 2006 Sauvignon Blanc is made in a classic style like the great wines of Poilly Fumé and Sancerre. candied apples • ripe blackberries • toasty • cherry pie • spicy chocolate finish
Tasting Notes
Purple-black in color, with crimson hues along the edge of the glass, our Tempranillo strums its guitar as it delights your senses with a symphonic combination of Spain and California. Exhibiting aromas of candied apples and ripe blackberries, it has a lingering toasty finish in the nose reminiscent of a grandfather’s sweet pipe smoke. It is luscious and round with delicately integrated tannins and a soft touch. Swirling in the mouth, it playfully teases the palate with flavors of cherry pie and a spicy chocolate finish of Mexican Mole.
As in the traditional style of the Rioja, it is blended with our highly prized Graciano and a splash of Garnacha. Our Tempranillo exhibits the true varietal character of this noble grape and naturally fuses together the worlds... »More

Tasting Notes
Our 2005 Meritage exhibits a lovely dark ruby color in the glass. On the nose, you'll find aromas of mocha, plum, cherry, tobacco and vanilla oak. This red blend, produced entirely from estate grown fruit, will improve for 5 or more years.
From the Winery
Established in 1996, our artisan vineyard is 40 acres of beautiful hilltop overlooking the east side of Paso Robles. The property was previously home to two other premium labels, and judging from Penman Springs releases since, the tradition of fine wine production is in good hands!
