This exquisite Chardonnay is bright golden yellow in color, and aromas of ripe, juicy apples and ripe tropical fruits jump out at you. These ripe fruit flavors fill the palate along with vanilla, caramel and cream derived from aging 10 months in high-quality French oak. The texture is supple with a smooth, silky feel in the mouth.

A great example of this late ripening grape variety, our 2004 pure varietal Petit Verdot is dark ruby red in the glass, with a lovely open fragrance of red berries and coffee. The palate is soft and full with a complexity of mixed berries, spice and hints of mocha.

The 2003 Jemrose Pinot Noir is a bit more aromatic, more fruit forward and a bit heavier than the 01 or 02 vintages. It's an evolutionary change that reflects the changing balance in California Pinots from the Burgundian style to the more fruit centric California style.

The 2003 Jemrose is very aromatic, with pronounced floral aromas. It is full and round on the palate, with forward fruit that is dominated by that haunting Pinot Noir flavor. We often pair it with grilled salmon and seared tuna. It goes equally well with chicken, steak and lamb. We've done Winemaker Dinners where the Jemrose Pinot was paired with a complex salad. This wine shows bright aromatic tropical fruit, with green apple and citrus flavors. It is eminently refreshing and cleanses the palate with each sip. We highly recommend pairing this wine with sharp cheeses, antipasta, and fresh seafood (particularly shellfish like prawns or oysters and clams on the half-shell). It is also a natural compliment to lighter fare and spicy cuisine.

Tasting Notes

The nose starts off pure Sauvignon Blanc with vivacious grapefruit and mineral components. After a few minutes, more citrus and lemon grass aromatics develop along with a swirl of vanilla cream. The citrus scents translate into full citrus flavors with a refreshing "zing"; almost a touch of pine that later opens into a creamy pine-nut like texture on the mid-palate. This mid-palate creaminess is quickly followed by a clean, lingering and mineral finish, making this a perfect summer refresher.

Our 2005 Estate Sauvignon Blanc is our first Bordeaux-Graves style Sauvignon Blanc, except that we blended it with Chardonnay instead of Semillon. This is a crisp, yet complex warm weather wine.

The 2003 Estate Chardonnay greets you with a rich golden honey color - a hint of what's to come. The nose supports the richness of the color with orange-blossom honey aromatics and undertones of pineapple and stone minerals. The mouth feel of the wine confirms the perception of richness with a lush honey texture and flavors of orange-blossom honey. This is accompanied with creamy hints of pineapple and vanilla. The luxurious finish is clean and exceptionally well balanced, with bright mineral acidity.

This single-vineyard cool climate Syrah is rich and intense. It exhibits vibrant flavors of blackberry and black cherry fruits, followed by notes of roasted meat and bacon fat characteristics of the Northern Rhone's finest wines. Spicy and complex, Carica's Kick Ranch Syrah has a velvety, deeply persistent finish with accents of pepper, dark chocolate and smoke. Abundant soft tannins make this wine approachable early but it will continue to progress over the next 5-10 years.

This is a wine of balance, sophistication and finesse, which, although delicious by itself, will be an elegant accompaniment to fine cuisine. Consider pairing it with lamb shanks, osso bucco, roasted or grilled meats, game or rich stews.

The Carica 2006 Sauvignon Blanc is made in a classic style like the great wines of Poilly Fumé and Sancerre. With clean, tropical flavors and crisp acidity, Carica Sauvignon Blanc opens with floral notes and aromas of pineapple, grapefruit and gooseberry with a hint of toasty oak. Tasting of guava, fig and passion fruit, the wine has a prolonged, refreshing lime accented finish.

Carica Sauvignon Blanc is the perfect accompaniment to lighter fare such as poultry, shellfish and other seafood. Because of its intensity and clean finish, it will also pair well with richer cream-based preparations.

Vare 2005 Bianco is a robust blend of Ribolla Gialla, Pinot Grigio, Tocai Friulano, Sauvignon Blanc and Chardonnay, all of which were slowly fermented in once-used French oak barrels. The wine, which was bottled at the end of May 2006, is medium bodied, with floral flavors and a long finish. Serve lightly chilled as an aperitif, with appetizers or with medium-bodied main dishes.

Our 2005 Sonoma County Syrah is a lush wine and still the darkest wine we have ever seen - lots of color pigments translate to lots of flavors! This Syrah comes from a small, hillside vineyard in the Mayacamas that is farmed organically and biodynamically.
