Carica Wines was started in 2005 by two friends, Charlie Dollbaum and Dick Keenan, to produce wines of extraordinary character from small lots of premium Sonoma County wine grapes. Dick, co-owner of Kick Ranch Vineyard, has supplied the grapes, and Charlie his first-rate winemaking skills. Dick’s commitment to providing Carica with ultra premium fruit is backed by sustainable farming practices with a focus on healthy, balanced vines tended by one of Sonoma County’s premier vineyard managers. Carica takes its name from the hardy fig trees (botanical name, Ficus carica) that accent Kick Ranch vineyard. Carica’s fig leaf insignia is inspired by these trees, too.
Carica is a “hands on” winery with the opportunity to support sustainable vineyard practices and to craft wines with minimal intervention. The goal of such winemaking is to capture a completely unique sense of place and time. Great intensity is a hallmark of Carica's wines, but never at the expense of the critical balance between fruit, acid, and tannin that distinguishes truly great wines. Carica Wines is proud to be a small winery dedicated to the highest quality.
Tasting Notes
The Carica 2006 Sauvignon Blanc is made in a classic style like the great wines of Poilly Fumé and Sancerre. With clean, tropical flavors and crisp acidity, Carica Sauvignon Blanc opens with floral notes and aromas of pineapple, grapefruit and gooseberry with a hint of toasty oak. Tasting of guava, fig and passion fruit, the wine has a prolonged, refreshing lime accented finish.
Carica Sauvignon Blanc is the perfect accompaniment to lighter fare such as poultry, shellfish and other seafood. Because of its intensity and clean finish, it will also pair well with richer cream-based preparations.
