Vare Vineyards is a small, focused project of George and Elsa Vare, making hand-crafted Italian-style white wines from the vineyards around their house in the Napa Valley. These wines are fashioned after special wines made by their winemaking friends in Collio (Friuli, Italy and Slovenia). The Vares are constantly experimenting with different cultural practices in the vineyards, differing harvest criteria and a variety of grape processing concepts. All of Vare's wines are made using the grape's own natural yeasts with minimal processing. Malolactic fermentation is discouraged for these young, fresh, intense wines. The results are delightful, tasty and different from almost any other wines produced in California!

Tasting Notes

Ribolla Gialla, grown primarily in the Collio region of Friuli, Italy and Slovenia, dates back to the 13th century, and Vare Vineyards is the only winery in the US producing it! The grapes were whole cluster pressed and had a long, cool fermentation in once-used French oak barrels, with the wine being bottled at the end of May 2006. Our Ribolla Gialla is a full-flavored, medium-bodied, dry, slightly spicy, citrus-flavored white wine with a long, creamy finish.

Try Ribolla Gialla with appetizers, soups, salads, especially seafoods, and even hearty white meat entrees. Above all, experiment and enjoy! You can still sip it on its own - serve lightly chilled!

Strange Grapes...Great Wine!

On the nose I got spice, lemon, lime, and a touch of oak. The wine smelled like it had great acidity. In the mouth I found sharp citrus at the front of the palate, which translated to lots of lime and lemon. Spice was prevalent throughout the wine, with a creamy mouthfeel in the mid and back palate as it warmed a bit. Overall, the wine was dry, smooth, and delicious. I was happy to add a new grape to my line up, and much look forward to the Bianco I have from Vare waiting for me in the cellar.

I am really enjoying this wine! To me, it tastes like lemon custard or a spiced creme brulee. There are notes of citrus followed by a creaminess that is different and not at all like a chardonnay. There is a nutty element that really makes this enjoyable. Paired with an herb roasted chicken, I am in heaven!

This wine was deliciously different. Tasted straight out of the fridge, I would have sworn it was Fino Sherry because of its nutty, citrusy, and dry aromas and flavors. When it had warmed up a bit it was more creamy tasting, but still had abundant citrus and almond flavors. I think you could serve this with appetizers, tapas, shellfish, or tuna.
